BUTTER CAKE WITH LEMON SAUCE
From the Kitchen of Robin Reinhold 1/4 c. butter
1 1/2 c. flour 1/2 c. sugar
1/4 tsp. salt 1 egg
1 T. baking powder 1 c. milk
1/2 tsp. butter flavor Cream butter and sugar; add egg, beat well. Combine dry ingredients in small bowl. Add to creamed mixture alternately with milk. Put into greased 8x8 cake pan. Bake at 350 for 20 minutes. LEMON SAUCE: In small saucepan, combine 1 c. sugar, 3 T. cornstarch, 1/4 tsp. salt and 1/8 tsp. nutmeg. Gradually add 2 c. boiling water. Cook until thick and clear, then add 4 T. butter and 1/2 c. lemon juice. Serve with cake. (An old recipe from my mom’s file.)
